Marne's Family Favorite - Fire Island Ziti

At United Way of Central Illinois, we know that food has a special way of bringing people together. This World Food Day, our very own Marne Fauser is sharing a personal favorite recipe that blends fresh ingredients, bold flavors, and the spirit of community at the dinner table.

Fire Island Ziti is a hearty, flavorful dish that combines roasted plum tomatoes, spicy sausage, broccoli, and just the right kick of red pepper flakes. It's a meal that balances comfort with a bit of zest. It's perfect for sharing with family and friends.


Fire Island Ziti

Ingredients

  • 2 pounds plum tomatoes, halved lengthwise
  • 3 tablespoons olive oil, divided
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 8 ounces ziti or small tube pasta
  • 2 cups fresh broccoli florets
  • 1 package of Johnsonville New Orleans Style sausage, cut into 1/2-inch slices
  • 1/2 teaspoon crushed red pepper flakes
  • 1/3 cup grated Parmesan Romano cheese

Directions

Toss tomatoes with 2 tablespoons oil, garlic, and salt. Place cut side down in a 15x10x1-in. baking pan. 
Bake at 450° for 20 minutes or until tender.

Cook ziti according to package directions. Meanwhile, in a large skillet over medium heat, cook sausage in remaining oil along with the broccoli. Add pepper flakes; cook 1 minute longer. Stir in tomatoes and het through.

Drain ziti mixture; toss with sausage mixture. Sprinkle with cheese.
